What the food hygiene course covers
Five short lessons covering food safety hazards, personal hygiene and fitness to work, cleaning and cross-contamination, temperature control, and records, then a 12-question assessment.
Food safety hazards
The four types of food safety hazard, food poisoning, and why food handlers have a legal duty to keep food safe.
Personal hygiene and fitness to work
Handwashing, clothing, jewellery and cuts, and why you must report illness before handling food.
Cleaning and cross-contamination
How bacteria spread from raw to ready-to-eat food, keeping them apart, and cleaning and disinfecting properly.
Temperature control
Keeping food out of the danger zone: chilling, cooking, cooling, reheating and hot holding.
Records and controls
Food safety management systems, HACCP principles in plain terms, and why accurate records matter.

Your legal duty
The law behind food hygiene training
Food businesses in England operate under the Food Safety Act 1990 and the Food Safety and Hygiene (England) Regulations 2013, with equivalent regulations in Scotland, Wales and Northern Ireland. Food handlers must be supervised and instructed or trained in food hygiene matters appropriate to their work.
The law does not name a particular certificate or course. What it requires is that the training is appropriate to what the person actually does. That's why a level 2 awareness course suits most food handlers and why supervisors usually need more.

This is awareness-level food hygiene training with a certificate on completion. Where you specifically need the level 2 course, that is available as a separate course.
Officers look for training appropriate to the role and for the food safety management system behind it. This course provides the training record; your procedures and monitoring still have to exist.
