Your legal duty

The law behind food hygiene in education training

School food businesses operate under the same food law as any other. In England that means the Food Safety Act 1990 and the Food Safety and Hygiene (England) Regulations 2013, with equivalent regulations elsewhere in the UK, and food handlers must be supervised and instructed or trained in food hygiene matters appropriate to their work.

Allergen requirements apply in full, and school catering has the additional complication that pupils' known allergies are recorded elsewhere in the school. Getting that information to the kitchen and to servers is a school system as much as a catering one.
